Chicken Scampi


Enjoy this creamy and flavorful Chicken Scampi!

Ingredients:
2 tablespoons olive oil
1 lb (450 g) chicken breast, cut into thin strips
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cloves garlic, minced
1/2 teaspoon crushed red pepper flakes (optional)
1/4 cup dry white wine
1/4 cup chicken broth
1/4 cup fresh lemon juice
2 tablespoons unsalted butter
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
1 lb (450 g) linguine or spaghetti, cooked according to package instructions
 
Directions:
Prepare the Chicken: Heat olive oil in a large skillet over medium heat.
Season the chicken strips with salt and black pepper.
Add the chicken to the skillet and cook for 5-7 minutes, until golden brown and cooked through.
Remove the chicken from the skillet and set aside.
Sauté the Garlic: In the same skillet, add the minced garlic and crushed red pepper flakes. Sauté for 1-2 minutes, or until the garlic is fragrant and lightly golden.
 
Make the Sauce: Pour in the white wine, chicken broth, and fresh lemon juice. Bring the mixture to a simmer, allowing it to reduce slightly for about 2-3 minutes.
 
Add Butter and Cream: Lower the heat and add the unsalted butter, stirring until melted. Then, pour in the heavy cream and continue to simmer for another 2-3 minutes until the sauce thickens slightly.
 
Combine Chicken and Sauce: Return the cooked chicken strips to the skillet. Stir to coat the chicken with the sauce. Add the grated Parmesan cheese and stir until melted and well combined.
 
Serve: Toss the cooked pasta in the skillet with the chicken and sauce until well combined. Garnish with fresh parsley and additional Parmesan cheese if desired.
